Doomsday Cauliflower Seeds

This is our Doomsday Cauliflower Seeds section. It tells how many cauliflower seeds one would need on hand in an emergency situation in order to grow your own food.

Cauliflower is basically a cool weather crop.  I have grown cauliflower down to 20 degrees Fahrenheit. You can find cauliflower in four colors: white, purple, orange and green but the white and purple are the only ones that have varieties that are open pollinated. All four colors can be found as hybrids.

Cauliflower can be eaten raw or cooked. It is good either way. Now, cauliflower is being riced and used as a substitute for mashed potatoes and even pizza crust!

One seed will produce one head. Most heads will make three cups of cauliflower. Heads can weigh up to six pounds. While in Afghanistan, I saw some heads that were at least eight  pounds.

One cup of cauliflower has about 25 calories. This is not a good vegetable to live on but it has other good stuff in it. It is rich in fiber.

One head produces about 75 calories. You would have to eat 16 heads or 48 cups of cauliflower a day to survive. 16 heads per day is about 5900 plants per year. 

It would be impossible for one person to grow this much in one year. But unless you have a freezer or will be pickling your cauliflower, you will not need much since cauliflower cannot be canned so it must be eaten fresh. It will only last 24 to 48 hours unless you have a way to keep it cool. Then it will last 4 to 7 days.

Pickling it using a pressure cooker will allow you to keep if for up to one year. I have not tried pickled cauliflower myself so I am not sure how it tastes. (Just ordered some from Amazon. I guess I will find out.) (10-20-2018--I received the cauliflower.  It is a bit hard but tastes okay.  I guess it could be cooked longer for a softer bite.)

Let's say you would need 6,000 seeds a year. Seeds from the cauliflower will last two to three years.
