There are about 15 calories in a cup of mustard greens. For a 1200 a day calorie diet it would take 80 cups of mustard greens. It is not feasible to consume 80 cups of mustard greens in a day.

Grow a few for variety. They can be eaten fresh, sun-dried or canned; however, I do not think they would be very good canned.

Mustard greens are pungent leafy greens from the brassica family. They are traditional fare in Asia, Africa, the Southeastern US, and other regional pockets. Their familiar spicy-mustard flavor lends itself well to stir-fries and sautés, as well as salad mixes. Choose from diverse colors — light to dark green, purple, red, or variegated — and textures — smooth, frilly, or serrated leaves.

Any color other than green may lead a scavenger to think there is something wrong with them.

They may not have a lot of calories, but they have a lot of vitamins the body needs. Having a few with spinach, kale, or collards would be good for variety.

Another advantage of mustard greens is there are enough varieties that they can be grown year round here in San Antonio and many other areas of the country. You can have fresh greens on a daily basis.

You can grow about 24 to 30 plants in a 4 x 8 raised bed. This will give you more than enough for seed production and trading.

They will last about one day or less without refrigeration before they start to wilt. So harvest only as much as you need.
